Mr. Katsunori Seki started making and selling frozen bentos after being approached by a local greengrocer about whether it would be possible to use damaged or unsold vegetables as processed food. Mr. Seki, who has been researching and developing frozen rice for some time, cooks the vegetables he collects into side dishes with flavors that go well with the rice and serves them. Frozen bentos are sold in vending machines and can be purchased at any time. Mr. Seki says that he wants to convey that food waste can be reborn as a wonderful resource depending on ideas and utilization. What kind of future does he envision?
