Until now, plum fruit used in producing plum wine was not used in other products and had been used as feed or fertilizer, but to take advantage of the flavor and moist texture that can only be achieved by using the plums from plum wine, she gave the plums new life as dried fruit. Ms. Toukairin says that by embodying the “waste not spirit” inherent in the Japanese people, she hopes to make better use of Japanese ingredients and improve the food self-sufficiency rate.
